Stollen Cake Masterclass 28/11/2026

In this masterclass, we will get to know step by step how to make the classic German Stollen cake, a rich, aromatic Christmas treat filled with festive spirit. It will be a practical and informative session in which we will focus both on the technique of making the dough and on quality filling, spices, and the proper maturation of the cake.

We will start with preparing the Stollen dough. We will look at how to choose and prepare the ingredients correctly, what the temperature of the butter, milk, and yeast should be, and how to achieve the right dough consistency. We will learn how to knead the dough so that it is elastic, soft, and strong enough to incorporate the rich filling while still remaining light and airy.

Special attention will be given to preparing the dried fruits and nuts. We will talk about how to prepare raisins and other dried fruits properly so that they are aromatic and juicy, as well as how to choose suitable nuts and other additions. We will also look at the role of spices in the Stollen recipe: citrus zest, vanilla, and warming Christmas spices that create this cake’s distinctive aroma.

Once the dough is ready, we will learn how to add the filling properly so that the fruit and nuts are evenly distributed throughout the cake and do not fall out or settle in one place during baking. We will also discuss Stollen shaping and the traditional forming technique that gives the cake its characteristic appearance.

Next, we will turn to proofing and baking. We will look at how to tell when the dough has risen enough, how temperature and proofing time affect the final result, and how to avoid a cake that is too dense or dry. We will also talk about the correct baking temperature and time so that the Stollen is beautifully golden on the outside, but soft, aromatic, and evenly baked on the inside.

A particularly important stage is treating the freshly baked Stollen. We will learn how to use butter and powdered sugar properly to create a rich coating that helps preserve the cake’s moisture and at the same time creates the traditional white, snowy look. We will also discuss why Stollen is one of those desserts whose flavor only becomes more pronounced with time.

Finally, we will focus on Stollen maturation and storage. We will look at how to wrap the cake properly, under what conditions to store it, and how long to let it mature so that the dried fruits, butter, spices, and other ingredients come together into a harmonious, rich bouquet of flavors.

During the masterclass, we will share practical pastry tips: how to choose high-quality dried fruits and nuts, we will make marzipan ourselves, learn how to achieve a soft and aromatic dough, how to avoid the most common mistakes, and how to make a Stollen that will be a wonderful addition to the festive table or a special homemade gift.

At the end of the masterclass, you will go home with your own Stollen cake, but also with an understanding of the importance of each stage of the process, from kneading and proofing the dough to baking, the butter coating, and the long maturation, so that you can successfully make this traditional Christmas treat at home as well.
